Hummus: make your own or buy any kind you like.
Bread: don’t skimp. A firm baguette with a firm, tasty seeded crust is wonderful.
Fresh tomato is best, but canned diced is still fantastic.
A good olive oil, but any is OK. Use generously so you can taste it.
Cut your baguette in thick coins on the diagonal. A thick chewy bread is best. Spread on some hummus. Mix the cut or diced tomato with a generous amount of olive oil and a pinch of salt. Spoon onto hummus. Add some fresh basil or roasted red pepper if you have any handy. Eat! Great as lunch, dinner, or a snack.
